Este guiso cálido y muy condimentado es rico en sabores y para ser disfrutado durante las cuatro estaciones. Siéntase libre de sustituir el caldo de verduras por otros gustos, el tomate funciona particularmente bien. Si prefiere algo más picante, adelgace con un poco de caldo o agua antes de servir.

Ingredientes

6 tazas (2 1/2 pintas / 1 1/2 litros) de caldo de verduras
3 dientes de ajo machacados
2 cebollas picadas
2 1/4 taza (1 lb / 450 g) de batatas, pelada y cortada en cubitos
1 x 400g de garbanzos en lata
7/8 taza (6 oz / 170 g) de mijo
Aproximadamente 1 cucharada de salsa de soja
1/2 taza (4 oz / 115 g) de mantequilla de maní
2 tazas (3 oz / 85 g) de col rizada picada (Kale)
Jugo de 1 limón

Método
Calentar una cacerola grande y agregar 1-2 cucharadas de caldo de verduras. Agregar el ajo y la cebolla y saltee hasta que estén suaves. Agregar el resto del caldo, las batatas, los garbanzos, el mijo y una o dos gotas de salsa de soja. Cocinar a fuego lento durante 20 minutos. Retirar un poco del líquido del guiso de la cacerola, mezclar con mantequilla de maní y vover a colocar en la cacerola. Agregar la col rizada y cocinar por 5 min. Sazonar al gusto con jugo de limón y salsa de soja, agregando poco a poco. Esta receta es para 4 personas
