Aquí un secreto de mi época como mesera: el pan tiene un propósito muy específico y muy manipulador.

En un restaurante italiano en el que trabajaba, teníamos que tener el pan en la mesa dos minutos después de la llegada de los comensales. Teniamos que calcular la cantidad (un pan para tres personas), untarlos con aceite y espolvorearlos con sal.

Después de tomar su pedido, necesitábamos revisar el pan y traer más dentro de los cinco minutos posteriores a que terminaron el pan, hasta que llegara la comida.

¿Por qué?

Porque los clientes son un dolor de cabeza cuando esperan. 

“¿Cuál es la diferencia entre una porción de pescado con patatas fritas y dos porciones de pescado con patatas fritas?”
“¿El pan para la sopa viene aparte?
“¿Ese platillo va a ser demasiado grande para mí?”
¿Cuánto más grande es el filete de cuarto kilo que el de medio kilo?
“¿La pizza aqui viene con queso?”

El pan es un mecanismo de distracción. Cuando el cliente está esperando en la mesa, todo parece tardar más. Tan pronto como tengan un poco de pan en qué ocuparse, no molestarán a los meseros con quejas absurdas, con entretenimiento y exigencias mientras las meseras y meseros se ocupan de otras mesas.

Experimentarán el tiempo de una manera mucho más corta y menos intrusiva, y no se quejará de que la comida tarda una eternidad, cuando en realidad solo han pasado diez minutos y la cocina está ocupada. Entonces, para recapitular: ofrecen pan para calmar la impaciencia.

    I know this is bad, but Texas Roadhouse is so famous for its rolls that you might not even know what kind of restaurant it actually is. Though the steakhouse sells a mouthwatering array of steaks, ribs, and other meals, the rolls are for a reason: They’re delicious. The bread is pillow-soft, doughy, and sweet. On their own, they might be considered a quality, standard dinner roll. I wish I live close by…

    It is a business trick. A free treat (bread or breadsticks) before you eat could actually make your meal more expensive. First things first: the bread you get before your food is not to fill you up, and it’s not a restaurant simply being nice. It actually makes you hungrier because a blood sugar spike when you eat carbs makes you want more food.

    I attended to Escoffier culinary school in Texas, and I have been told the reason restaurants serve bread is that historically tavern owners served only one meal per day, at a set time and for a set price, so filling diners up on bread before the main course of meat, fish, or other more expensive foods often helped keep expenses down for the establishment.
