La molleja es un musculo del pollo, que tritura los alimentos antes de que sean digeridos.  Forma parte del sistema digestivo de las aves.

La molleja (contre), o estómago muscular, desproporcionalmente grande. Los músculos que la rodean ayudan a triturar los alimentos duros e, incluso, algunas aves almacenan piedrecitas para facilitar el proceso. A este órgano se le ha llamado “los dientes de la gallina”, pues muele y mezcla mecánicamente el alimento que literalmente tragan los pollos y las gallinas.

Básicamente el aparato consiste del buche, que  es la primera cavidad que se encuentra el alimento tras pasar por el esófago, es una especie de bolsa que sirve para almacenar, humedecer y ablandar los alimentos. De ahí, pasa al estómago, donde hay jugos gástricos y, a continuación, se encuentra el estómago muscular o molleja.

Al igual que otras partes del pollo, el corazón y la molleja son una buena fuente de proteínas. Tiene sabor a carne con un ligero fondo a víscera y una vez cocinadas su textura queda ligeramente dura recordando a los cartílagos aunque mucho más fácil de masticar. Las mollejas de pollo son consideradas vísceras y  contienen un bajo contenido en grasas,  aportan vitamina A, pero altos los valores  de colesterol.

Las mollejas de pollo aportan muchos nutrientes, son muy económicas y preparación muy   sencilla.

  1. Si bien suelen venir ya limpias, en primer lugar debemos limpiar bien las mollejas.
  2. Vamos picando tanto la cebolla como los ajos, los tomates y el pimiento. Lo ponemos todo en una sartén con un chorrito de aceite.
  3. Tenemos que hacer un sofrito, hasta que todo ello esté blando. Una vez listo, lo pasaremos por la batidora y reservamos.
  4. En una olla, añadimos un poco de aceite. Cuando esté caliente, incorporamos las mollejas y las dejaremos freír un buen rato.
  1. Posteriormente se añade el vino blanco y esperamos unos cinco minutos  hasta que se evapore.
  2. Es el momento en el que  añadimos nuestro sofrito y cubrimos el preparado con agua y,  además, le echamos la pastilla de caldo y coloreamos un poco con cúrcuma (además de darle sabor). Dejamos cocinar durante una hora y ya tendremos un rico plato de mollejas de pollo.

Ingredientes para cocinar Mollejas de pollo

  • 1 kilo de mollejas de pollo
  • 5 dientes de ajo
  • 1 cebolla
  • 2 tomates
  • 1 pimiento verde
  • 1 pastilla de caldo de pollo
  • Aceite
  • Medio vaso de vino blanco
  • 1 pizca de cúrcuma

Las mollejas de pollo también se pueden preparar con arroz resultando un rico, sencillo y económico plato para disfrutar y compartir.

Tener presente que, por ser un músculo,  las mollejas de pollo son más duro que la carne,  por lo que necesita más tiempo de cocción. Nunca quedarán tan tiernas como una carne,  pero sí lo suficientemente blandas para todo el mundo las pueda comer y ser así un manjar.
